
In 2014, my health began to suffer to the point that I had to seek medical treatment. I suffered from exhaustion, fatigue, stress, low white blood cell count, hypertension, pre-diabetic and a vitamin D deficiency. My physician ask me, "what is it that I was doing that was causing my immune system to be so depleted"? I replied, I am the caregiver to my father who suffered from Dementia. My physician, suggested that I look into placement for my father, which was not an option or risk having more health problems. I knew that my father would be properly cared for living with me. At this point, I knew that I had to do something to improve my health and strengthen my immune system.
I began researching ways to boost my immune system. I tried several things and most did not work. So, I begin to pray and I started writing down scriptures that pinpointed healing over my body. I would recite these scriptures daily. I also ask God to direct me to resources that would aid in healing my body.
One day, I received a random email to subscribe to an on-line health newsletter, so I did. Informational emails from this newsletter started pouring in. I started gathering all the information and came to the conclusion that my gut was out of wrack and my body was toxic. I begin researching ways to heal my gut and detox my body.
The first thing that I did was make adjustments within my eating habits. My doctor suggested that I start a plant based diet, no sugar and processed foods. My doctor stated to me that if I didn't make these changes, I would be placed on medication for hypertension and diabetes. So, I got to work. I started with the Keto diet and lost 12lbs. At the time, I was not over weight. However, my blood pressure remained high along with my A1C. I slowly began to replace sugar with monk fruit, until I reached the point that the use of sugar was no longer a factor. My water intake went from 1/2 gallon to 1 gallon a day. I became more active, and concentrated only on cardio when I worked out at the gym. I replaced coffee with bone broth, which helps heal your gut lining and builds your immune system. I eventually eliminated meat totally from my diet and started eating plant based foods only. I purchased a juicer and started juicing(apples, pears, oranges, cucumbers and kale was my favorite combo) and eventually became fully plant based. I detoxed my body by doing coffee enema's., which cleans out parasites and improves liver functions.
All of these resources improved my over all health and my immune system is functioning properly. I am on no medications. I am grateful to God for his healing power and also for providing me with the resources to improve my health.

Makes 12 Muffins
Preheat oven to 425 degrees. Lightly spray olive oil in muffin pan
1 bag of shredded potatoes
Seasoning of choice(garlic powder, smoked paprika, garlic salt, seasoning salt and rosemary)
Precooked diced green, red and orange peppers
2 cups plant based shredded cheddar cheese
Blend all ingredients, drizzle olive oil over ingredients and mix, spoon mixture evenly in each muffin tin. Bake 25 minutes or until done.
Once muffins are cool place 2 muffins in plastic wrap and then place in sealed freezer bags. Each night place your desired amount of muffins in the refrigerator to thaw for the next morning. Remove muffins from freezer bag and heat in microwave still in plastic wrap for 45 seconds or grab and go and heat at work.
Makes 12 Cups of Soup
2 Cans of Great Northern Beans if you don't have time to make homemade Great Northern Beans
1/2 Cup of chopped cilantro
Cumin
Taco seasoning
1 White onion diced
2 2oz Cans of green chilies
2 8oz blocks of plant based pre soften cream cheese
1 8oz bag of shredded carrots
1 Cup of Green enchilada sauce
2-3 Cups Vegetable broth
Add great northern beans
add cumin, taco seasoning, diced onions, shredded carrots and cilantro. Add other desired seasonings(season to taste).
Add soften cream cheese and green chilies. Pour in vegetable stock and add green enchilada sauce. Simmer on med heat until cream cheese is dissolved, stirring frequently and then lower heat to Low and simmer for 15 mins. If you desire a less thicker soup add more vegetable stock. Top your bowl of soup with plant based shredded cheese, sour cream and tortilla strips and serve. Also switch out tortilla strips with brown rice.
When I became an adult, I thought that my teen years of suffering from acne was over, but then came hormonal acne with scarring in my late thirties and it was worse than my teen years. I have very oily skin and hyperpigmentation, which added to my embarrassment as an adult acne sufferer. My most prone breakout areas were my chin jaw- line areas, which consisted of painful cystic acne. I have been to several Dermatologist and they prescribed several medications from Retin-A to Spironolactone, and nothing worked until I did my own research through trial and error and found a skin care regimen that worked for me and here it is!
